Thai Fish Cakes
Ingredients
500g Cod or Haddock or white fish meat (minced)
2 tbsp. red curry paste
3 tbsp. long yard beans (sliced fine)
3 tbsp. kaffir lime leaves (chopped fine)
1 egg
1 tsp. salt
½ - 1 tbsp sugar
3 cups vegetable oil (for frying)
Preparation
1. Put all the ingredients in a large bowl and mix well kneads, with the hand until it sticks.
2. Shape the mixture into a small patties about 4-5 cm in diameter
3. Deep fry in vegetable oil until golden brown both side.
4. Serve with cucumber relish
Ingredients for cucumber relish
½ cup diced cucumber
½ cup diced onion
½ cup sugar
½ cup vinegar
¼ cup water
1 tbsp chopped red spur chilli
Preparation
1. Mix sugar, vinegar and water in the pot and heat until come to boil.
2. Remove from the heat and allow to cool, spoon in a little bowl add diced cucumber, onion and chilli.
